cheese board






Excuse some of the pictures and the cork in the wine glass.  I'm testing out a few new photography skills/editing as well as the recently added vintage wine corker that we received from John's grandparents.  He made it look so easy, but I completely failed at it (aka - the cork landed in the bottle).  I guess I'll wait till he's home to try it again.  I skipped the opening of Hamlet & Ghost - I figured it'd be too packed, but I might step out tonight for a cocktail with a girlfriend.  We'll see!

Anyways, this lovely Malbec is pretty easy-going.  I don't think it was too tangy for taste where I have to hold it in my mouth before the bitterness subsides.  It was quiet smooth.  I paid about $15 for this bottle and I was really pleased.  I picked a Malbec (again) because I purchased my favorite Spanish cheese - Manchego.  It was great to pair with the chocolate fig spread, almonds and grapes.  Although not the best all-around dinner, I do love that cheese boards can incorporate just about a variety of fruits, vegetables, meats and (mostly) cheeses.  It's easy to pull together and accommodate the variety of flavors whether from the wine or tastes - I hope you're able to enjoy your pick from Winedown Wednesday today! :)

The knit hat and over sized scarf kept me warm on the blustery weekend days.  I even like the smallest detail of the monochromatic initial that peeks out.  You can find your initial in a variety of colors when you click the link!  I like being able to have pieces that are easy when going from the cold outdoors and into shops and stores.  Winter accessories help balance it it all out! :)

We had a quiet weekend in Saratoga, but I still was in and out getting things done.  This week and weekend coming up are pretty busy as John is at a training meeting in PA and other than the normal housework, I'm trying to get a few special odds and ends done.   John's 31st birthday is coming up and Valentine's Day happens to be that weekend - we always stay in and cook something fun and different - I'm thinking caviar and sushi!  Tonight we have a new bar opening up.  I'd love to go, but I know it'll be INSANE so I may have to delay!  There's also the ice bar at the Sagamore Resort on Lake George, ice hockey in the state park or perhaps an actual ski day.  I'll keep you in the loop and hopefully I'll fit everything in!

I've been wearing layers this week at work, not because it's cold going to and from, but as I've been working on several corporate units lately at one of our properties.  Ponchos and capes are a great alternative to having the warmth for outdoor wear, but not the heaviness of a wool coat.  I snuck out on Wednesday for a shoot/lunch with John as he was transitioning to mids, so I've been trying to make his weekend worth while!  We enjoyed a yummy burger at Smashburger...it'll do while I wait a few more months until Shake Shack opens back up! :)  I'm happy it's Friday as I've had a busy but VERY productive week - really, all of January has been busy and productive, but I'm definitely looking forward to the weekend.

I've been off the grid lately as I've been under the weather, so I hope this week I can be back on track and share with you some updates and new ideas! :)  In this post I wanted to share with you some of my go-to winter essentials.  Most are from last year, but I've found newer items that are similar to what I own or have replaced over time.  These are pretty much my everyday wear.  I also love wearing my various pairs of duck boots and wide brimmed hats throughout the winter too! ;)  Are there any certain items that are a must wear for your winter wardrobe?!

Dromoland Castle

I love neutrals and this cape caught my eye right away!  I loved the high collar (of course) and it is just so warm!  It was perfect to pack for our windy days in Ireland (even though most of them were filled with rain showers)!  The wide brimmed hats weren't super practical either, but it worked for the times we explored the towns and pubs!

Ireland Part II:

Our second day was just as blustery as the first, but we were able to get right up and head to the Cliffs of Moher for some sight seeing.  We didn't make it very far other than up the steps to the tower as the wind was so strong people were literally blowing away and skidding across the the wet grass!  We had to even hang on to the wall to get back down the stairs.  We were pretty much soaked by the time we left and not too long after they closed the cliffs.  We immediately headed back to the B&B to throw our pants in to dry and then headed down to O'Connor's for some warmth by the fireplace.  John got the fish and chips (I snuck some) and I had an amazing bowl of chowder - I think I'm addicted to brown bread now!  I also topped it off with an Irish coffee - it just warmed me right up!


Our next stop took a bit of driving.  We hopped back in the car (this time with our luggage) and drove along the coast to Lahinch where we saw the beautiful coastal (surfing!) town and peaks of sun sneaking through the clouds.  We were going to stop by and see the beautiful art work of a local artist, Phillip Morrison, but unfortunately he was closed this time of year.  I'll have to make another trip to see the new pieces!  After that we finally made our way to Dromoland Castle.  Frank & Mary Ellen treated John and I to afternoon tea and the beautiful Presidential Suite.  It really was everything you could imagine!  As I'm not normally a tea drinker, it was however quite delicious.  The trio of trays full of tea sandwiches and desserts were to die for!  We were treated as a king and queen that day!

Finally, John and I settled in our room which consisted of a large entry, a whole open wardrobe room, a large sitting room and bedroom and pretty much the largest bathroom I've ever seen.  Everything was covered in a soft floral print, complimentary stripes or neutrals but somehow it was very tasteful and soothing.  ...But really the bathroom I could have lived in and I think I could have been lost in that bed!  The bathroom had a large round tub with jets and a steam shower along with his and hers sinks, but plenty of room for a girl to get dolled up in.  I just may have to book two nights there next time to really enjoy it! ;)  After settling in, and still being full from tea, we just decided to head out to grab a few informal drinks at a nearby restaurant since there was a wedding going on at the castle and we weren't feeling up to being "too" formal.  I.E. I did not bring very fancy clothing for such an event!  It wasn't anything too fancy, but Frank ran into some local friends and thereafter we called it a night.

Looking ahead I won't go day by day for you, but these two days were a special treat!  I wanted to share them in a bit more detail!  I'll be sure to share more of our travels and recommendations on our trip in Ireland here over January! :)
